MILK RASMALAI

INGREDIENTS:

Milk powder—1 cup
Condensed milk - 1/2tsp
Milk - 1/2litre
Egg – 1
Sugar – 2tbsp
Baking powder -1/2 tsp

METHOD:

Heat milk ,bring to a boil, add sugar and add condensed milk.
Beat egg, and a dough with milk powder , baking powder and egg.
With wet hands , take a little dough about size of a marble and flatten on palm.
Then drop them in hot boiling milk.
Cook for 5-10 minutes.
Cool it and decorate with crushed pista, almond and walnuts.

Onion salad

Ingredietns:

onions -  finely chopped
fresh green chilli - one, minced
fresh mint- minced
coriander leaves-minced
salt to taste
lemon juice - 1tsp

Method:

Mix all the ingredients together except salt.
Stir in the salt just before serving.
CUCUMBER RAITA:


Ingredients:
1 small cucumber
1tsp cuminseeds
150g or 1cup thick curd or yogurt
1/4 tsp salt
1/4 tsp paprika or red chilli powder
few coriander leaves finely chopped


Method:


Peel the cucumber and cut lengthwise into two halves. Slice each half finely.
Heat a small pan over low heat and dry roast the cumin seeds until they turn a light darker. keep it aside, then crush the cuminseeds.
Beat the yogurt or curds until smooth,stir in the cumin along with the salt.
add cucumber to yogurt and mix well. Put the raita into a serving bowl, then arrange some plain cucumber slice on top and sprinkle the paprika evenly on the sliced cucumber. Garnish with coriander leaves. serve with any dish.

Indgredients:

Fresh milk - 500 ml
ground rice - 4tbsps
condensed milk - 1 tin
almonds powder - 1tbsp
sugar - to taste
cardamom powder - 1tsp
rose water - 1tbsp
flaked almonds - 1 tbsp
cashews ,finely chopped - 1tbsp
pista nuts, lightly crushed - 1tbsp
saffron strands - few

Preparation Method:

Put the fresh milk in to a sauce pan over a medium heat. Mix the rice powder and almond powder together and sprinkle evenly over the  milk. Brink the milk to the boil, stirring frequently. And add the condensed milk and sugar. Stir and cook for 8-10 minutes. Now add the cardamom powder,saffron and nuts and mix well.
Then Remove from heat and allow the mixture to cool and stirring occasionally. Stir in rose water. Now Ready to eat firni. Serve hot or cold. This is a very nice and tasty sweet.
Ingredients:

Musk melon pieces - 1 cup
sugar - 1tsp
honey - 2tsp
a pinch of salt
a pinch of pepper

Method:
Grind the melon fruit and sugar with water, Then pour the glass and add honey,salt and pepper, stir well. And serve.
Ingredients:

Cabbage
yogurt - 2tbsps
salt to taste
mint leaves - finely chopped
onion-finely chopped

Method:
Grate the cabbage coarsely and put it into a mixing bowl. Add the finely chopped onions,salt,yogurt and chopped mint leaves. Then mix well.Chill before serving.
INGREDIENTS:

Ripe Tomatoes
Sugar to taste
a pinch of salt
Cardamom powder
cold water

Method;

Clean the tomatoes and cut into halves. Put the tomatoes,water,cardamom, salt a pinch and sugar into a blender and switch on for a few minutes. Then strain the juice and serve immediately.
Ingredients:

Sorekai - 1
sugar to taste
milk - 1 cup
khova - 1 cup
chiroti rawa/soji/semolina-2tbsps
condensed milk - 1 tin

Method:

Grate the Sorekai and press the water. Then put it into a vessel. Add the milk and cook. Until the sorekayi is tender. Add condensed milk,sugar,semolina and khova. Stir constantly. Add ghee and stir well. When it becomes thick add cardamom powder and fried raisins and cashewnuts. Mix well.Remove from heat. Ready to eat sorekai halwa.
